Baking and renovating don't necessarily go hand in hand; however with 3 weeks to go until completion at Paddington i am going to whip up these little morsels for our site meeting as a Thank You and most importantly a Hurry Up! Ella and i whipped them up last weekend and they were all gone within a few hours. The cupcake recipe is a Donna Hay one www.donnahay.com.au however the icing recipe is self concocted and i have to say without bragging is what makes these irresistible...

Icing Recipe

Place in a mixer and beat on high for 5 minutes

125g of cream cheese

2 strawberries or 5 frozen raspberries (or both!)

2 cups of icing sugar

This will make more than enough icing for the 20 mini cupcakes

Donna Hay makes them in a larger size but i prefer to do mini ones as my girl's can't finish a whole big one - the recipe normally makes about 20 mini ones and cooking time is around 15 mins (instead of the 20 mins for the big ones)

 

The ingredients..they all go in the one bowl mixer..it's fool proof even Ella (5 YO) can make them

 

I use a mixer but if you don't have one a hand held beater is fine..our mixer has the best view in the house!!

 

I use these strong paper cups as opposed to the flaky thin paper ones so that i can just lay them on a flat baking tray..i just find they contain the mixture better and make a fluffier cupcake..most baking stores or even supermarkets sell them...I use the Robert Gordon brand (you can see them in the ingredients shot above)

 

Whilst they are baking i make the icing...

 

Once they cool..ice them and cover in sprinkles! (Gigi likes to do this part)

 

And the best part..the eating!!!
